Pineapple Coconut Colada
Recipe
- Kick spring and summer off with a unique twist!
- Ingredients
- 1 cup frozen pineapple chunks, thawed
- 1 cup frozen coconut chunks, thawed
- 1/2 lemon, very thinly sliced
- 1/2 cup brandy
- 1/3 cup honey
- 1 bottle of Riesling
- 1 1/2 cups carbonated water, chilled
- Ice cubes
- Fresh pineapple wedges
- Directions
- Add the first 5 ingredients to a 2-quart pitcher
- Add wine and stir
- Refrigerate for 2-4 hours or until chilled
- Just before serving, stir in carbonated water
- Serve over ice
- Garnish with a fresh pineapple wedge
- Close your eyes, pretend you’re at the beach, sip back and enjoy!
